
Sturgeon solyanka
Description
The recipe won't take much time. Serve the solyanka hot, in portions, sprinkled on top with fresh herbs if desired. Pickled cucumbers go perfectly with a rich sturgeon fish broth. I really like adding lemon juice and olives. Try making this solyanka at home and delight your family and loved ones with a delicious and nutritious lunch. Ladle into bowls and serve.

Thoroughly rinse the sturgeon, separate the head, tail, and backbone. Cut the resulting fillet into pieces.

Place all parts of the fish except the fillet into a pot, cover with water, and set over medium heat.

Prepare, wash, and chop the vegetables.

After the broth comes to a boil, add coarsely chopped carrots, grated salted cucumber, onion, pepper, and bay leaf, and cook for another 30-40 minutes.

After some time, strain the broth into another saucepan.

Then place the broth back on the heat, add the potatoes and finely chopped onion. After 15 minutes of boiling, add the prepared pieces of sturgeon to the broth and cook the soup for another 7–10 minutes.
