
Solyanka with sauerkraut
Description
The recipe won't take much time. Mushroom solyanka with sauerkraut made at home is an excellent option for a first course. 1. Soak dried white mushrooms in water for 20 minutes. Then add fresh mushrooms to the pot, pour in at least 2.5 liters of water, and place over heat. You can also add whole onion and carrot to the broth. Simmer over medium heat for about 40 minutes, then carefully remove the mushrooms and let them cool slightly.

2. While the broth is cooking, you can prepare the vegetables. In a skillet with a small amount of vegetable oil, sauté the chopped onion. Add peeled tomatoes (alternatively, according to the recipe for preparing cabbage solyanka, you can use tomato paste or sauce).

3. After stewing the vegetables for about 5 minutes, add the sauerkraut to the pan and pour in a couple of tablespoons of brine. Add pepper to taste, if desired.

4. You can also add finely shredded fresh cabbage for a thicker consistency. Gently mix everything and continue simmering over medium heat.

5. During cooking, when the liquid begins to evaporate, add a little broth. Simmer the cabbage to your preferred tenderness: softer or slightly crisp.

6. Strain the ready broth through a fine sieve. Return it to the heat. Place in the pot all the mushrooms you will be using for this simple sour cabbage solyanka recipe—cooked and marinated.

7. Then add the cabbage to the broth and bring everything to a boil.

8. Finally, add fresh mushrooms and chopped herbs to the pot. Taste and adjust salt and pepper. Bring to a boil, then simmer for another 5–7 minutes, and remove from heat. Cover with a lid and let it steep for at least 20–25 minutes. Before serving, homemade sour cabbage solyanka can be garnished with sour cream, olives, or a slice of lemon.
