
Solyanka without pickles

Rinse the meat. Peel the onion. Prepare all the ingredients so nothing is forgotten: the ingredients should be within easy reach.

Cut the meat into medium-sized pieces, mix with our olives, and pour water over (4 l).

Place over medium heat. When the liquid begins to boil, watch for foam and skim it off promptly.

Squeeze the juice of half a lemon into the broth. Slice the remaining 2.5 lemons into rounds. Add the lemon slices to the broth and simmer over low heat for about an hour and a half.

While the broth is boiling, slice the onion into nice half-rings.

Put the onion rings into a frying pan greased with vegetable oil. When the onion softens slightly, reduce the heat, add tomato paste and capers. Mix everything with a spatula.

Place the meat on a plate. Pour the onion mixture with capers and tomato paste into the pot. Remove the meat from the bones and cut it into small pieces. Slice the bacon, salami, and sausages. Fry the meat in a pan together with the other sliced ingredients.

As soon as the broth begins to boil, add the meat slices that have been fried until golden brown. Add spices and herbs to taste. Let the solyanka simmer over low heat for another 10 minutes. This dish is best served with sour cream.
