Description

A hearty first course. Meat assortment solyanka is a dish of Russian cuisine, often served in restaurants. But it's also very easy to prepare at home. Today, our version of this soup contains no smoked meats and is made with chicken broth. Solyanka can also be made with water, but my broth is very light, so it doesn't have a rich flavor. Use good-quality sausage, and your solyanka will be enjoyed with pleasure. Serve the soup hot.

    Prepare the ingredients for making solyanka.

    Peel the onion, wash it, and finely chop. Place it in a frying pan.

    Grate the pickle or chop it finely and add it to the onion.

    Place the tomato paste.

    Pour sunflower oil and 100 ml of broth into a frying pan.

    Cover the pan with a lid and simmer the onions with cucumbers and tomato paste for 10–12 minutes over low heat until tender.

    Meanwhile, cut the ham and boiled sausage into small cubes.
