
Solyanka
Description
Just 40 minutes—and a hearty, delicious soup is ready on your table. There are many ways to prepare solyanka, and this is the quickest one. You can use several types of sausage; in this case, smoked and boiled. You could also use sausages, different kinds of frankfurters, hunter's sausages, etc. Before serving, don't forget to add a slice of lemon and a dollop of sour cream to each bowl. Ladle into bowls and serve.

1. The ingredients for solyanka can be used without frying; you can prepare it with smoked pork ribs, or you can sauté them as in this recipe. Solyanka can be made in various ways, and this one is the simplest.

2. Immediately cut the potatoes into cubes and cover with cold water. Place on the stove and bring to a boil. Season with salt and spices to taste.

3. Chop the onion into small cubes.

4. Place the sliced sausage and onion into the pan. Add a little vegetable oil and start frying.

5. Slice the pickled cucumbers and add them to the sausage. Fry, stirring constantly.

6. Add a little tomato paste and mix well. You can add a couple of tablespoons of vegetable broth.

7. Fry for about 5 minutes, stirring constantly.

8. When the potatoes have simmered for about 10 minutes after baking, add the sausage and cucumber sauté. Add salt and spices to taste.

9. The sausage is boiled for a short time (about 5 minutes), and at the end, you can add sliced olives.

11. Cover with a lid and simmer for another 10 minutes. Add fresh herbs to taste. This sour soup recipe doesn't require broth, so it's ready very quickly.
