
Layered carrot salad

Vegetable salads are healthy any time of year. Of course, ingredients may vary depending on the season. I chose a combination of carrots and zucchini, as regular cucumbers or zucchini have become boring. A light sauce will add a pleasant tanginess to the salad and accentuate the sweetness of the carrots. To prepare a layered carrot salad, the most important thing is to have a good vegetable slicer, since the vegetables need to be sliced thinly. Otherwise, the recipe for this layered carrot salad is quite simple—just try it yourself.

Peel the carrots and cut them into thin, long pieces. Make sure they don't break or become translucent.

Slice the onion into thin rings. Then slice the zucchini (just like the carrots).

Important! Generously salt the zucchini, let them sit and release their moisture. Then rinse and place them on towels. They must dry thoroughly.

Let's prepare the sauce. Mix lemon juice, olive oil, spices, and chopped herbs, and stir well.
