
Creamy pink salmon soup
Description
Perfect for lunch. This soup is very popular in northern countries, where it is traditionally served in a loaf of black bread with a shot of alcoholic drink. If desired, you can substitute pink salmon with any other kind of red fish. Ladle into bowls and serve.

Prepare the listed ingredients.

Peel the vegetables and rinse them under water. Cut the potatoes into medium cubes and the onion into small pieces, then place both in a pot or saucepan. Pour in hot water and boil for about 10–12 minutes from the moment the liquid begins to boil. Remove any foam that forms.

Grate the peeled carrots on a fine grater and add to the container. Season with salt and pepper.

Pour in the cream at room temperature and mix the soup. Carefully cut the pink salmon into small cubes, removing the skin and rinsing it. Add to the pot. Simmer the soup over low heat for about 3 minutes.

At the very end, rinse and chop the dill, add it to the pot and mix. Simmer for another minute, then turn off the heat. Keep in mind that if you pour cold cream into the hot soup, it may curdle when heated!
