
Creamy mushroom soup

This dish is another one of my culinary discoveries. I first made creamy mushroom soup about a year ago—I was waiting for my husband to return from a business trip. He'd been away for a whole week, so I wanted to prepare something more special than usual. I browsed the internet and found a recipe for creamy mushroom soup on an Italian website. I decided to try it—and it turned out amazing! Perhaps the best thing about this dish is this: when you taste it, you'd think it was very complicated to make, as the soup turns out incredibly delicate, pleasant, and delicious. That's why it's perfect for a dinner party—your guests will believe you've been slaving over it for hours. But in reality, making this soup is a piece of cake! Melt the butter in a large soup pot over medium heat. Add the finely chopped onion and bay leaf.

Sauté for 5 minutes over medium heat, stirring, until the onion becomes semi-transparent.

Add the roughly chopped mushrooms. I used button mushrooms and shiitake, but you can use any mushrooms you have on hand.

Fry the mushrooms with the onion for another 5 minutes over medium heat, until the mushrooms become soft. Then add the spices.

Now it's necessary to deglaze the pot—that is, scrape off all the fat from the sides. To do this, add wine to the pot, stir, and simmer for 2 minutes over medium heat.

The wine will start to foam - that's how it should be.

Now add the chicken broth to the pot (preferably warm or at least at room temperature, but not cold).

Immediately after this, add the cream to the saucepan.

Bring the soup to a boil, then reduce the heat and simmer for another 10 minutes over low heat, uncovered. Taste the soup and adjust seasoning with salt and pepper.

The creamy mushroom soup is ready. Let it steep under the lid for 5-10 minutes, then serve, adding some fresh green onions to each bowl. ;)
