
Sweet Cold Soup
Description
Perfect for lunch. For sweet cold soup, use any seasonal fresh berries: cherries, sour cherries, strawberries, raspberries, blueberries, black or red currants, etc. You can enjoy cold soup all summer—it's light, tasty, and satisfying at the same time. I especially love it for breakfast with a sweet bun. Check out my recipe, and I'll tell you: serve it with fresh herbs and sour cream.

Step 1

Prepare the ingredients for the sweet cold soup. Everything should be chilled in advance.

Sort the berries, wash them thoroughly, and remove the stems.

Place the berries (90 g) into the blender container, add sour cream (55 g, reserve the remaining 5 g for garnishing the soup), kefir, and powdered sugar. Reserve the remaining 10 g of berries for serving the soup.

Use an immersion blender to puree the mixture. Then pass it through a fine sieve to ensure the berry skins do not end up in the soup.

Pour the soup into a bowl and garnish to your taste; I placed berries in the center and poured sour cream on top.
