
Squash with apple
Description
A hearty first course dish. To easily peel the squash, place it in a large pot with boiling water and cook for 15 minutes. Drain the boiling water and pour cold water over the squash; let it stand for 5 minutes to cool. Once cool enough to handle, use a knife to remove the skin. Cut the squash in half and remove the seeds. Then cut into 1-inch pieces. Place the squash pieces together with apples into a large microwave-safe bowl. Top with pieces of butter. Sprinkle with brown sugar, walnuts, salt, and cinnamon. Cover with a plastic lid, making several vent holes for steam. Microwave on high for 7 1/2 minutes. Remove, uncover, and stir. Return to the microwave and cook for another 7 1/2 minutes on high, until tender. Serve hot. Ladle into bowls and serve.
