
Tatar-style shurpa
Description
Perfect for lunch. Tatar-style shurpa should be served with fresh herbs and lavash. If you use young lamb in the cooking, the dish will turn out absolutely delicious. I was told this Tatar-style shurpa recipe by my friend who was born and raised in Kazan—so I think the authenticity of the recipe is guaranteed. Good luck, and serve the soup hot.

Wash the lamb thoroughly and cut into pieces.

Pour 2 liters of water over the lamb and bring to a boil, cook for 5 minutes, skimming off the foam. Drain the water, rinse the meat. Add 3 liters of water and bring to a boil again.

Boil the broth for 2 hours, skimming off the foam, and in the meantime prepare the vegetables. Cut the potatoes into quarters and place them in a bowl of water.

Cut the carrots into large pieces.

Slice the onion into half-rings.

Cut the tomatoes into strips.

Cut the pepper.

When the meat is ready, add onion, potato, and carrot. Cook for 20 minutes. Then add pepper, tomatoes, and spices. Cook for another 15 minutes.
