
Shurpa over the campfire
Description
The soup is simple and quick to prepare. Aromatic shurpa with a rich flavor, cooked outdoors over an open fire, is my favorite way to make this dish. A hearty broth with large pieces of vegetables and tender chunks of meat — it's incredibly delicious! Traditionally, lamb is used for this soup, but you can substitute it with beef (which is what I'll be using today). However, make sure to choose meat with bones — this will give you a richer, more flavorful broth. Serve with fresh herbs and sour cream.

Prepare all the ingredients from the list. You can use either lamb or beef — any cuts, but preferably with bone.

Light a fire using logs or any wood waste. Place a cauldron over it using a special support. Grease the entire inner bottom and walls of the cauldron with vegetable oil suitable for frying. Pour in the oil, heat it thoroughly, and add chopped pieces of meat (previously washed and dried).

Fry, stirring, until golden.

Pour in a little boiling water so that the water slightly covers the meat. Reduce the heat to medium, cover the pot with a lid, and simmer for about 1 hour.

After some time, open the lid and check if there is enough liquid in the cauldron. If necessary, add a little water.

When the meat becomes tender, add the potatoes cut into large pieces.

Also add carrots, which can be sliced into rounds or cut into small sticks.

Fill the cauldron with water almost to the top. Increase the heat to make everything boil.

Next, simmer the shurpa over moderate heat for about 20-30 minutes.

Then add the bell pepper cut into strips.

Tomatoes cut into slices.

And sliced onions in half-rings, salt and spices to taste. Don't forget to add bay leaf and garlic cut into 2-4 pieces.

Mix and, maintaining a gentle simmer, cook everything together for another approximately 15 minutes, adjusting the number of wood pieces, or rather embers at this stage, since direct flame is no longer needed—glowing embers will be sufficient.

Open the lid of the cauldron and let the finished shurpa absorb the smoky aromas from the campfire.
