
Moose meat shurpa
Description
Perfect for lunch. Here is a simple recipe for moose meat shurpa. You'll need the following ingredients: moose meat, potatoes, carrots, onion, bell pepper, fresh herbs (coriander, parsley, dill), spices (salt, black pepper, cumin, coriander, khmeli-suneli), apple, and garlic. The soup turns out very rich and filling. I highly recommend cooking it in a cauldron outdoors.

Thoroughly rinse the moose meat and cut it into large pieces.

Put the moose meat into a cauldron and pour cold water over it. Place the cauldron over the fire.

Slice 2/3 of the total amount of onion into rings.

Cut the carrots into strips.

After the water comes to a boil, remove all the foam from the cauldron and add onion and carrot to it.

After 30 minutes, add tomatoes cut into quarters and peeled to the cauldron.

Next, add the remaining onion (in half-rings) and sliced bell pepper.

Let the soup boil for 20 minutes, then add the peeled potatoes whole.

Prepare the spices. Finely chop the garlic and apple, add salt and pepper to taste, cumin 1 tsp, coriander and khmeli-suneli 2 tsp. Add the spices, apple, and garlic to the shurpa, but not immediately—add them 15 minutes after the potatoes. Stir and cook for another 20 minutes.
