
Beef shurpa cooked over an open fire
Description
When you're going on a multi-day hike, take some meat and vegetables along to prepare beef shurpa over the campfire. Cooking outdoors is always enjoyable—it has something primal about it. Shurpa is an ancient Eastern dish, so nutritious and delicious that it has survived since the beginning of the last millennium. Cook the beef shurpa over the fire slowly, covered with a lid. Wash the meat and cut into medium-sized pieces.

Pour cold water over the meat and simmer for 2.5 hours, skimming off the foam.

Coarsely chop the carrots, peppers, and tomatoes. Add the vegetables to the cauldron.

Add the roughly chopped onion.

Add the potatoes after 10 minutes.

After half an hour, add spices and a little more fresh onion and tomato. Cook for 10 minutes, remove from heat, and let it steep.
