Wild Duck Shurpa

Description

Hearty and aromatic soup. While the wild duck shurpa is cooking, everyone's mouth waters from the fragrance wafting from the pot. And as you already understood, it takes a long time to prepare. But what a result! Serve the wild duck shurpa in bowls, generously sprinkled with fresh herbs. If you have sour cream and lavash, even better! And when enjoying this outdoors, it's perfectly fine to have a shot of vodka with such a delicious dish :) By the way, vodka is sometimes added directly into the shurpa too. I'm not sure why, but they say it makes the taste better. Wild duck shurpa is simply delicious. If you get the chance, I highly recommend trying it. Serve the soup hot.

    Pluck the wild ducks and clean them thoroughly. Singe off any remaining small feathers. Take a 10-liter cauldron and place the prepared duck carcasses into it.

    Pour water over duck carcasses until they are completely covered—approximately 6 liters. Take one whole onion and add it to the pot. Do not salt the duck to prevent the meat from becoming tough. Game meat needs to be cooked for quite a long time, from 4 to 5 hours. Skim off the foam periodically.

    Meanwhile, prepare all the other components for the shurpa. Wash the potatoes, peel them, and cut into large pieces.

    Carrots, wash, peel, and chop into large pieces as well.

    Peel the onion, rinse, and slice into half-rings.

    Wash the bell pepper, remove the seeds, and slice into 5 mm wide half-rings.

    We wash the tomatoes and cut them into large slices.

    Herbs - dill, parsley, cilantro, take one bunch each, wash and chop.

    Peel the garlic, wash it, and finely chop.

    Cut the salo into strips and fry in a pan until crispy.

    Add the onion and carrot to the frying bacon and sauté slightly.

    After 4 hours, when the duck is cooked, add potatoes to the broth. Cook for about 10 minutes, then add fried onion and carrots. Season with salt and pepper to taste.

    Add bell pepper and tomatoes and cook for 15–20 minutes. Add spices to the ready shurpa—cumin, coriander, whole peppercorns, bay leaf, and tomato paste. Add half of the fresh herbs. Simmer for 10 minutes, then season with garlic. Pour 100 grams of vodka into the shurpa.

    Remove the pot from the heat and let it steep for 5-10 minutes. Finally, it's ready!
