
Lamb shurpa
Description
A hearty first course. Lamb shurpa turns out light and appetizing! I prepare it when guests come over, for holidays. I garnish it with fresh herbs. Everyone is very pleased! I think your loved ones will enjoy shurpa too. Serve the soup hot.

Rinse the lamb and cut into small pieces. Cover with plain water. As soon as the water begins to boil, drain it.

Pour boiled water over the lamb. Place over medium heat.

Be sure to skim the broth. Use a skimmer or a spoon.

Lamb is boiled for about two hours. During this time, prepare the vegetables.

Slice the onion into half-rings, the tomatoes into thin slices, the pepper and carrots into julienne strips, and the potatoes into small pieces.

When the lamb is almost ready, add the onion to the broth and season with spices.

Next in line are the tomatoes. Add them to the broth and stir.

Then boldly add the remaining vegetables and cook the shurpa for another 20 minutes.
