A hearty first course dish. I'm sharing the recipe with you. Ladle into bowls and serve.

    Prepare the necessary ingredients. Cut the meat into cubes and wash the vegetables. Rinse the rice in cold water until the water runs clear, then soak it in clean cold water for 40 minutes.

    Sear the meat in heated oil until browned. Transfer it to a heavy-bottomed pot, add bay leaf, pour in hot water, and simmer for 40 minutes.

    Rinse the rice and mung beans in cold water, then drain in a colander. Add rice to a saucepan, bring to a boil, then add mung beans. Cook for about 20 minutes until the mung beans are soft.

    Peel the onion and carrot, then cut into small cubes. Sauté the vegetables in heated oil until soft. Add tomato puree, bring to a boil and cook for 2 minutes. Transfer to a pot and simmer for 5 minutes.

    Chop the herbs, add to the soup. Season with salt and pepper to taste. Cover with a lid and simmer for 2 minutes.
