Rinse the lamb and cut it into pieces.

Place the lamb fat at the bottom of the cauldron and wait for it to melt. Once melted, remove the cracklings from the cauldron and add the lamb meat.

Peel and finely chop the onion, add it to the cauldron and sauté. Then add sliced carrots and pour water over the mixture. Add spices and mix everything thoroughly. Periodically skim off the foam from the surface, and let it simmer for 2 hours to make the broth rich and flavorful.

Peel the potatoes, cut them into cubes, and add to the broth. Do the same with the bell pepper. Blanch the tomatoes, remove the skins, chop them, and also add to the broth. Then add bay leaf, garlic, and fresh chopped herbs. Simmer for half an hour with the lid closed.
