
Shulym from horse meat
Description
Hearty and aromatic soup. Shulym is a very rich and flavorful soup cooked over an open fire. If we can't go outdoors to cook over a fire, we'll prepare it at home. We'll use horse meat, although it can be substituted with lamb, beef, pork, or chicken. Serve with fresh herbs and sour cream.

Step 1
Finely chop the onion and grate the carrot. Sauté them in a hot frying pan.

Cut the meat into large, uniform pieces and add to the vegetables. Sear the meat for 5 minutes. Then add a little boiling water and simmer for 10 minutes.

Add salt and a mixture of spices including black pepper, ground paprika and coriander, saffron, cumin, and dried coriander.

Cover the container with a lid and cook for 1 hour until the horse meat softens. Periodically add boiling water.

Cut the potatoes, peppers, and tomatoes into cubes and add them to the pot with the already stewed meat. Add more liquid again and continue stewing until fully cooked.

When the potatoes are soft, add the green onions and tarragon. Turn off the heat and let our shulom steep for 30 minutes.
