
Beef shulym
Description
A hearty and aromatic soup. Shulyum takes a long time to cook, but this slow simmering is precisely what gives the dish its incredibly rich, velvety flavor. The broth thickens and the soup becomes hearty and filling thanks to the mashed potatoes added. You can customize shulyum with any vegetables, spices, fresh herbs, seasonings, and aromatic herbs to taste. To achieve an appetizing color, be sure to thoroughly sear the meat on all sides before simmering.

Prepare the listed ingredients. Peel the potatoes, carrots, and onion, and rinse them together with the tomatoes.

Trim the nerves and films from the beef and cut into large portion pieces. It is best to use meat on the bone or stew meat. Heat a cauldron or a non-stick pot on the stove, pouring vegetable oil into the container. Place the cut meat and fry for about 10-15 minutes until a golden crust forms.

Be sure to stir the beef while frying so that it browns evenly on all sides. You can slightly reduce the heat to medium.

Pour in hot water and add bay leaves. Bring the contents to a boil, then reduce the heat to medium. Cook the meat for 40 minutes, partially covered with a lid.

Cut the potatoes and carrots into large pieces and add them to the broth. If desired, you can add bell pepper or celery stalk to the shulym, which should also be cut into large pieces.

Slice the onion into similar pieces and add it together with the paprika and seasoning. Add other spices to your taste: cumin, khmeli-suneli, oregano, etc.

Remove the green cores from the tomatoes and cut them into pieces. Add to the broth and bring to a boil. Then reduce the heat and simmer the shuloom for 40 minutes.

Grind the peeled garlic cloves and add them to the container. You can optionally add fresh herbs if your family doesn't mind them in this delicious dish. Boil for another 5–10 minutes.

Pour the hot beef shulam into deep plates or bowls and serve. It goes wonderfully with sour cream, Greek yogurt, or garlic mayonnaise. Enjoy your meal!
