
Old Russian Shchi
Description
The recipe won't take much time. Before potatoes were introduced, cabbage soup was traditionally made with turnips or rutabagas. Turnip adds a pleasant note to the soup and doesn't spoil the taste, as many might think. The turnip turns out tender and delicious. You can also make the soup using sauerkraut, previously rinsed and squeezed. Serve in bowls and enjoy.

Prepare all the necessary ingredients for old Russian shchi.

Rinse the meat bone and place it in a pot, add one sliced carrot and onion. Pour in water and place over medium heat, then simmer gently, skimming off the foam, for 1.5 to 2 hours.

After some time, remove the bone from the pot and let it cool. Strain the broth; you won't need the boiled vegetables. Remove the cooked meat from the bone.

Bring the broth to a boil over medium heat and season with salt. Thinly slice the cabbage and add it to the pot with the broth, then cook for 10 minutes.

While the cabbage is boiling, grate the carrots on a medium grater and chop the onion. Peel the turnip and cut it into strips. Pour vegetable oil into a frying pan, add the vegetables, and sauté over medium heat for 5–7 minutes.

Add the sautéed vegetables to the pot.

Add the meat to the soup and cook for another 10 minutes.

Add finely chopped herbs and bring to a boil. Turn off the heat, cover with a lid, and let cool completely. Then reheat the soup and serve.
