Description

Perfect for lunch. Cabbage borscht made with fresh cabbage is a wonderful soup dish for the whole family. Aromatic and hearty, it will delight both adults and children. Despite the number of ingredients, all the components are simple and easily available. For the sauté, I chose to use pork fatback, though you can easily substitute it with bacon. It's precisely with this base that the borscht turns out especially rich and fragrant. Just look at this appetizing, vibrant beauty! It's best to use pork on the bone, but the soup will be just as delicious with beef, turkey, or chicken. Serve hot in bowls.

    Prepare all the ingredients from the list. You can use any meat, but preferably with bones. This will make the broth richer and more flavorful.

    Rinse the meat and place it in a pot. Add half of the coarsely sliced carrots, half an onion, bay leaf, peppercorns, and a bunch of herbs tied with string. Bring to a boil, skim off the foam, reduce heat to the lowest setting, and simmer for about an hour (until the meat is cooked).

    Cut the salo into small pieces and place on a preheated frying pan.

    Fry the cracklings, stirring occasionally, until the fat is rendered. If the fat is not salted, add salt.

    Using a skimmer, remove the cracklings and transfer them to a plate.
