
Cabbage soup with ham

Hearty and aromatic soup. Shchi is probably the most beloved soup of the Russian people. Shchi can be made with meat, fish, mushrooms, etc., but the constant ingredient has always been and remains cabbage, either fresh or fermented. Today we will try making shchi based on ham. Preparation: Place bone-in ham into a large pot, cover with cold water, and bring to a boil. Simmer until fully cooked. Remove the ham from the broth, separate the meat from the bones, and cut the meat into small pieces. Shred the cabbage and add it to the broth. Cook until the cabbage becomes tender. Finely chop an onion, parsley root, turnip, and carrot. Melt butter in a large skillet, add the chopped vegetables, and sauté until soft. Add tomato paste or tomatoes and cook for another 2-3 minutes. Transfer the sautéed vegetables to the meat broth. Place pieces of ham into a clay pot, pour the prepared shchi over the top, and bring to a boil. Garnish the soup with chopped parsley and serve with sour cream.
