
Cabbage soup with canned meat
Description
A hearty first course. I often rely on this quick recipe for making shchi when I have absolutely no time to cook, but really crave a good soup. We also frequently make shchi this simple way when going on hiking trips. No need to sauté vegetables or prepare meat broth—canned meat really comes in handy. Let me tell you how.

Step 1

Peel the onion and carrot. Finely chop the cabbage, grate the carrot, and dice the onion into small cubes.

Place all the vegetables in a pot, pour in 2 liters of water. Put on the stove and simmer for about 15 minutes after boiling.

Peel the potatoes and cut them into small pieces. Dice the tomato into small cubes.

Add potatoes, tomatoes, and canned meat to the pot, add half of the salt, and cook everything until the potatoes are done. Taste for saltiness—remember, the canned meat is already salty, so you might not need all the salt. Add more salt if needed, then add ground pepper. Finely chopped herbs can be added directly to the soup or served in individual bowls.
