Description
The soup is easy and quick to prepare. "Petrovskie" shchi is a very aromatic and hearty soup that everyone probably remembers from childhood. Don't be lazy—check out the recipe. Serve with fresh herbs and sour cream.

Step 1

Boil the mushrooms in the soaking water for about 15 minutes, then separate them from the liquid, but be sure to save the liquid for later. Chop all the ingredients for the soup.

Fry the mushrooms in a pan for 10 minutes. Meanwhile, put the meat on the heat to simmer slowly for about an hour (for the broth).

Add the onion and carrots to the mushrooms and sauté until the onion becomes translucent.

Add the fresh cabbage and mushroom broth to the resulting mixture. Simmer over low heat for about 20 minutes.

Add the sauerkraut to the frying pan. After a couple of minutes, add 3 tablespoons of tomato paste and simmer for another 20 minutes.

Remove the cooked meat from the broth and cut it into pieces. Return the meat to the broth, add the stewed mixture of vegetables and mushrooms, potatoes, and spices, and simmer over low heat for about half an hour.
