1. Pour 2.5 liters of water into a pot, add the meat, onion, and carrot sliced into rounds, and cook the broth as usual. Meanwhile, cut the mushrooms into pieces and cover them with cold water, letting them soak for an hour—by which time the broth will be ready.

2. Reduce the heat, remove the meat from the broth for now, discard the onion, and add the cabbage, potatoes, and mushrooms. Bring to a boil, reduce the heat, and continue cooking.

3. While the meat cools slightly, cut it into small portion-sized pieces and return it to the soup. Add tomato pieces, bay leaf, pepper, and spices. Bring to a boil, then simmer covered over low heat for another 10 minutes.
