
Sorrel Shchi with Pork
Description
Hearty and aromatic soup. Sour cabbage soup can easily be diversified by using sorrel as the main ingredient. It adds a wonderful, piquant flavor to the soup. Here is a quick version, perfect for busy home cooks. Serve this soup with sour cream or a slice of boiled egg. Definitely worth a try. The soup is ready to serve.

1. If you don't have time to simmer broth for a long time, keep this idea in mind! Wash the pork, dry it, and cut into small pieces. Place in a pot with water and set over heat.

2. After boiling, carefully remove the foam that forms. Cook the meat over medium heat for about 10-15 minutes.

3. Then carefully remove it with a slotted spoon.

4. While the meat is cooking, peel the potatoes and cut them into cubes. Add them to the broth when you remove the meat. Season with salt to taste and simmer over medium heat.

5. Heat vegetable oil in a skillet. Sauté chopped onions until translucent. Add carrots, meat, and peeled chopped tomatoes (you can use tomato paste or tomato sauce). Simmer over medium heat for about 10-15 minutes.

6. Place the meat with vegetables into a pot and continue cooking. Wash the sorrel, dry it well, and chop finely. You can also add parsley, dill, and other herbs to the soup to taste.

7. Add the herbs to the soup and bring to a boil. Season with pepper and (if needed) additional salt to taste. After a couple of minutes, remove from heat, cover, and let it steep for about 20 minutes. Before serving, add a slice of egg to each bowl.
