
Cabbage soup with seaweed
Description
The recipe won't take much time. These homemade green borscht made with seaweed are a real treasure trove of not only flavor but also vitamins. In this version, sorrel can easily be replaced with spinach or any other greens to taste. Use any meat—beef, pork, veal—or if desired, you can make a vegetarian version using vegetable broth.

2. First, wash the meat, place it in a pot with water, and put it on the stove. Once it comes to a boil, skim off the foam. Optionally, add bay leaf, onion, or other vegetables, and simmer the broth over medium heat until the meat is tender. Then carefully remove the meat, let it cool slightly, remove the bones, and cut it into pieces. Place the meat in a frying pan with a small amount of vegetable oil and sauté for a couple of minutes.

3. In a separate skillet, sauté the diced onion until lightly golden. If desired, you can enhance this simple kelp borscht recipe with carrots and tomato paste (for a brighter color).

4. Strain the broth (set aside about 100 ml), return it to the heat and bring to a boil. Peel the potatoes, slice them, and add to the pot to simmer over medium heat. Wash the sorrel, chop it, and place it in a high-sided skillet or saucepan together with the cabbage. Pour in the broth and simmer for 3–5 minutes.

5. After that, the contents of all 3 skillets can be combined and simmered together for another 10 minutes. During the process, you can season with salt and pepper to taste.

6. When the potatoes become soft, add the vegetables with meat to the pot. Add salt to taste if necessary and cook together for 5-10 minutes. Then remove from heat, cover with a lid, and let it steep for about 25-30 minutes.
