
Duck Sauerkraut Soup
Description
Nowadays, preparing such soup doesn't require much effort. Duck is available in all supermarkets. It's not necessary to use a whole duck for this dish—you can simply buy a set of different duck parts intended for broth. Serve the soup hot.

Cut the duck into pieces if it's whole. I used a ready-made set for soup. Thaw at room temperature.

Put duck pieces into a large pot with water. Place on the stove. As soon as the water boils, reduce the heat to the lowest setting. Add bay leaf. Simmer the duck gently for 2 hours. Throughout the cooking process, skim the foam off the broth with a skimmer.

Peel the onion. Cut into cubes. Add to a hot frying pan and sauté.

We do the same with sauerkraut. Place it in the pan and fry over low heat. However, the sauerkraut should be covered with a lid: it's not necessary to fry it too much, let it simmer instead.

Add the peeled potatoes to the broth. Add the fried onions and cabbage. Add any spices you like, to taste.

The cabbage soup should simmer over low heat until the vegetables are cooked. Mash the potatoes with a masher or fork once they become soft.

At the end, add fresh chopped herbs. The shchi is ready.
