
Cabbage soup with chicken and vegetables
Description
The recipe won't take much time. Shred is fermented outer leaves of white cabbage, which housewives usually throw away. In raw form, they are quite tough, and fermentation makes them more tender, but even so, they require quite a long cooking time. That's why it's best to use a stewing chicken for this soup, as it also needs prolonged cooking. Of course, you should try this version of shchi at least once to decide whether you like it or not. The soup is ready to serve.

Prepare all the necessary ingredients for making cabbage soup with chicken from shredded cabbage.

Rinse the chicken and cut it into pieces. Pour water into a pot, add the chicken and cabbage. Simmer over low heat for 1.5 hours until the cabbage and chicken are tender.

Peel the onion and potatoes and place them whole into the pot with the soup. Cook over medium heat for 30 minutes.

Remove the chicken, onion, and potatoes from the soup. Discard the onion, as we no longer need it, and mash the potatoes with a fork.

Remove the bones from the chicken, break the meat into pieces, and add it back to the soup together with the potatoes.

Add bay leaf, season with salt and pepper. Cook for 10 minutes. Remove the soup from heat, add chopped herbs and serve.
