
Sauerkraut soup with mushrooms
Description
Preparation will take a couple of hours, but the dish will be very filling! Serve cabbage borscht with mushrooms with sour cream or yogurt. You can also vary the spices. Smoked sausages are a great substitute for ham. This dish is perfect for a hearty lunch among friends. Ladle into bowls and serve.

Step 1. Take smoked ham (or smoked sausage) and place it in a pot. Pour in water. Add bay leaf, salt, and pepper. Bring to a boil, then simmer for 30 minutes.

Step 2. Slice the onion thinly. Place it in a preheated frying pan with sunflower oil. Fry the onion until it becomes soft.

Step 3. Add paprika, mix and set the pan aside.

Step 4. Add sauerkraut to the broth.

Step 5. Then add mushrooms, onion, and garlic. Cover with a lid and simmer for another 30 minutes over low heat.

Step 6. Remove the ham from the broth. Remove the skin (you can leave it on if desired). Finely chop the meat into small cubes.

Step 7. Put the sliced ham back into the pot, cook for another 20 minutes.

Step 8. Add vinegar, sugar, and cumin (you can add any herbs) to the pot. Cook for another 5–10 minutes. Serve with a spoonful of sour cream.
