
Mushroom Shchi
Description
The recipe won't take much time. Mushroom shchi is a dish of the fasting diet. It is very light, healthy, and easy to prepare. Preparation: Place dried mushrooms in a bowl, cover with hot water, and let soak for several minutes. Then drain and finely chop. Peel and dice the potatoes. Put sauerkraut into another bowl, cover with warm water, and squeeze out excess liquid. Transfer the sauerkraut to a large pot, add water, and bring to a boil. Add tomato paste, cover with a lid, and simmer the sauerkraut over low heat. Heat vegetable oil in a medium frying pan. Add finely chopped onion and the mushrooms, sauté, then transfer to the pot with sauerkraut. Add water and continue simmering over low heat. Add the diced potatoes and cook over low heat until potatoes are tender. Season with salt and pepper to taste, stir in chopped parsley, and remove from heat. Let the soup cool slightly, then ladle into bowls. If desired, serve mushroom shchi with sour cream. Serve immediately.
