Description

Hearty and aromatic soup. Lenten borscht can be very delicious, even though it contains no meat. But meat can be replaced with nutritious ingredients such as beans, peas, lentils, or chickpeas. You can even add mushrooms to such borscht! In short, anything you like—just make sure it's vegetarian. Ladle into bowls and serve.

    You need to soak the beans in advance (preferably for about 2 hours). This improves their taste. In general, before cooking legumes, they should be soaked. This helps remove pesticides. I used white beans.

    For fasting cabbage soup, as you understand, I'll be using only vegetables—no meat broth at all! Chop the potatoes, cabbage, and greens. Grate the carrots and garlic on a grater.

    Pour plain water into a saucepan. Add the soaked beans. Bring to a boil. When the water boils, add bay leaf and black peppercorns. Add the potatoes first.

    Meanwhile, heat up the skillet. We won't cook completely without fats—after all, it's a fast! Pour vegetable oil into the skillet and sauté the onion with carrots and tomato paste.

    Ten minutes after adding the potatoes, put the cabbage with the sautéed vegetables into the pot. Add salt, and you can also add spices or dried herbs. I use Adyghe salt, which already contains all of these. I'll add fresh herbs another ten minutes later.

    Well, that's it — five minutes and it's ready. Cover with a lid. Let the soup sit for a while. Serve with garlic or green onions. For those not observing the fast, enjoy it with sour cream.
