
Sorrel soup without potatoes
Description
A hearty first course. In summer, sorrel grows in many uninhabited areas. Usually, my husband and I gather it outside the city, in trusted clearings. Sorrel can also be grown at home, if you have even a small plot of land. This plant is very beneficial for health and helps boost immunity. Serve with fresh herbs and sour cream.

Peel the carrots using a vegetable peeler. Grate on a grater. Peel the onion and chop finely.

Pour sunflower oil into a frying pan, add grated carrots and onions. Fry until golden brown.

Chop the sorrel not too finely, so that it remains visible in the soup. Meanwhile, place a pot of water on the stove and wait for it to boil.

Put the vegetables into boiling water. Add the sorrel. In a separate dish, crack the eggs and beat them with a fork.

Add spices, salt, and bay leaf. Then pour the egg mixture into the soup. The soup will be ready in 4 minutes.
