
Salmon ceviche
Description
The composition of ceviche can be adjusted at your discretion. For example, red bell pepper and pieces of ripe mango are delicious additions to the fish and avocado. You can also add dried herbs to taste, such as basil, rosemary, and others. For extra spice, if desired, sprinkle the fish with a pinch of dried ground ginger.

Step 1

Rinse the salmon and carefully pat dry with a paper towel. Take a thin sharp knife. Cut the fish into small squares, no more than two centimeters on each side. Squeeze juice from half a lemon and add it to the fish. Let the salmon marinate.

While the fish is marinating, prepare the aromatic spice mix. A mixture of peppers—black, white, and pink—goes very well with this dish. Grind the peppercorns in a special mortar and add garlic pressed through a garlic press.

Now it's time to chop the avocado. Cut it in half lengthwise and remove the pit. Then peel off the skin and chop it into small pieces. Pass the garlic cloves through a garlic press and add to the avocado.

To assemble the dish, take a flat plate and place a layer of avocado. Put the fish on top. Drizzle with the remaining lemon juice from the fish and sprinkle with pepper. Place arugula leaves or other greens on top of the dish.
