Description
A beloved and well-known salad — let's present it as a symbol of the coming year. This bright and festive presentation will delight everyone at the holiday table and bring joy to both adults and children. You can use any layered salad as a base and decorate it with one of the ingredients. If you plan to arrange a horse's head or a full horse on top, I recommend first practicing by drawing a horse on paper. You can also cut out the drawing along the outline and trace it, for example, with mayonnaise, making it easy to shape the carrots as desired. Surprise your guests! A salad featuring the symbol of 2026 — the Red Fire Horse — will become an eye-catching centerpiece for your New Year's table.

Step 1

Prepare all the ingredients from the list. Boil the potatoes, beets, carrots, and eggs in advance. Let them cool. Flake the herring into small pieces, removing all the bones.

Peel the potatoes and grate them on a coarse grater. Place on a flat round dish. Salt and spread with mayonnaise.

Finely chop the herring fillet and layer it over the potatoes. You can use ready-made fillet. But if you decide to prepare the herring yourself, be sure to carefully remove all the bones.

Place the diced onion on the herring. To prevent the onion from becoming too pungent, you can pour boiling water over it and let it sit for a couple of minutes. Salt and pepper the onion, then spread mayonnaise on top.

Peel the boiled carrots and grate them, just like the potatoes. Place them on top of the onions, season with salt, and cover with mayonnaise.

Peel the hard-boiled eggs, grate them on a coarse grater, and place them over the layer of carrots. Salt to taste and spread with mayonnaise.

Peel the boiled beet and grate it on a grater with large holes. Cover the entire salad with the beet.

Salt the beet and spread mayonnaise on it. Use a spoon to go around all sides, shaping the salad into its final form.

Grate the remaining carrot on a fine grater. Place it on top, shaping the carrot to resemble a future horse, as shown in the photo or as your imagination suggests.

From egg whites, I made the eyes, teeth, and a flower. From olives, I cut out nostrils, eyebrows, and pupils. Dill sprigs became eyelashes and the tongue. For the bangs and mane, I used braided string cheese, but you can substitute it with cucumbers, egg whites, or anything else your imagination suggests.

Herring under a fur coat is ready for the Year of the Horse. Before serving, you can additionally garnish the salad with fresh herbs. Happy New Year!
