
Peasant-style soup
Description
A hearty first course. In fact, this is a type of solyanka. Originally, this dish was called "selyanka," but the essence remains the same. A rich pork broth with sauerkraut and pickled cucumber—classic ingredients that go perfectly together. We'll also add smoked meats to make it more filling.

Step 1

Bring the water to a boil. Add the washed meat. Cook the broth with bay leaf and pepper until done, about 1.5 hours. Strain the finished broth, cool the pork, and remove it from the bone.

Cut the chilled meat, sausages, ham, and sausage into small pieces.

Finely chop the cucumbers, onion, and parsley. Simmer the ingredients with butter in tomato paste for 10 minutes.

Bring the broth to a boil again. Add the ingredients from the skillet to it. Cook the soup for 10 minutes.

Then add the meat and smoked meats. Bring the soup to a boil.

Then add the olives together with the brine. Let the solyanka simmer briefly, then immediately turn off the heat.
