
Herring cheesecake

1. Prepare the ingredients. I don't specify the amount of mayonnaise—use as much as you usually do for a "shuba" salad, but keep in mind that not all layers need to be coated. Boil the vegetables and eggs, then cool and peel them.

2. Prepare the herring, leaving only the boneless fillet, then cut it into small cubes. Peel the onion and finely chop it, then marinate in a mixture of sugar, vinegar, and water. Add water by eye, just enough to cover the onion. You can add a pinch of salt, but I prefer the onion to be slightly sweet, so I only add sugar.

3. For assembling the cake, you will need two rings of different diameters, 20 and 21 cm (I used 19 and 21 cm; the key is that the difference shouldn't be too large). Grease the bottom and sides of the rings with vegetable oil. Insert the smaller ring and also grease its sides with oil.

4. Grate the potatoes on a coarse grater. Spread them over the bottom and season with salt. Mix the mayonnaise with the soft cheese and spread over the layer of potatoes.

5. Next, a layer of marinated onion, then a layer of herring.

6. Next, a layer of grated eggs and mayonnaise-cheese sauce.

7. Grate the carrots on a coarse grater and spread them out. Season with salt and pepper. Do not spread anything over this layer. Place the dish in the refrigerator.

8. Now pour warm water over the gelatin, let it sit for 10 minutes to swell, then heat to 60 degrees. Stir until fully dissolved. If your gelatin instructions indicate a different procedure, follow the recommended method.

9. Coarsely chop the peeled beet and place it in the food processor bowl. Add salt and run the machine for a couple of minutes.

10. Add 150 g of paste-like cheese to the beet purée, and turn on the machine again for a minute.

11. Finally, add the gelatin, beat once again; the mixture is ready.

12. Take the preparation out of the refrigerator and carefully remove the inner ring.

13. Pour the cheese-beet mixture over the sides and top of the cake. Be very careful not to disturb the layers. Smooth it out with a spatula. Refrigerate the herring cheesecake for at least 2 hours, or better yet, 3-4 hours.

14. Don't rush to remove the ring; first, run a knife along the edge to separate the cheesecake from the sides. Then, remove the ring. The herring cheesecake is ready!

15. Decorate it as you like; I used young beet greens. Cut into portions and surprise your guests with its unusual shape and taste!
