
Herring under a fur coat with cucumber

Minimum effort — excellent result. There are countless recipes for this now-classic salad. In my opinion, one of the best is herring under a fur coat with cucumber. Whether you like it or not, I personally really enjoy the freshness and juiciness of cucumber in this rather dense, flavor-rich salad. The cucumber refreshes the taste, making the salad less heavy. Here's how I prepare this salad: 1. Cut herring fillet into small pieces. 2. Boil the beet until fully cooked, peel it, and grate. Be sure to squeeze the grated beet to remove excess liquid. 3. Finely chop the onion. 4. Boil the eggs until done, then grate them. 5. Grate the cucumber (I use a fresh cucumber, but you may use a pickled one if desired) on a medium grater. 6. Layer the ingredients in a festive salad bowl: herring, onion, carrots, cucumber, eggs, and beets. Spread mayonnaise on top. Also, lightly drizzle mayonnaise in a crisscross pattern over each layer. 7. Refrigerate the salad for a couple of hours before serving. Alternatively, you can serve it immediately.
