The salad is quick and easy to prepare. There are several ways to make this salad. Today I will show you the salad ready to serve.

Prepare all the ingredients. Boil the potatoes, carrots, and beets in advance. Also boil the eggs hard and let them cool.

Peel the beets, potatoes, and carrots, and grate them on a coarse grater. Separate the egg whites from the yolks and grate them as well (set the yolks aside for now, you'll need them a bit later).

Prepare the herring into fillets and cut into small cubes. Also cut the onion into cubes.

Now we start assembling the salad. We spread each layer with mayonnaise and season with salt to taste. The layers should be shaped into a rectangle, with one end slightly wider than the other—narrower where the piglet's head will be and wider where the hindquarters will be. The first layer is potatoes.

Before serving, grate the yolk on a fine grater and sprinkle it over the salad on all sides. From the leftover beet pieces, cut out ears, a snout, and a tail, and arrange the dish in the shape of a piglet. "Herring under a fur coat" is ready for New Year's.
