Description
An easy-to-prepare dish. I'd like to suggest making "Herring under a Fur Coat" for the Year of the Dragon in the shape of this mythical creature. An original and impressive variation of everyone's favorite salad. A delicious dragon presented in a festive way will surely delight the patron of the coming year. Be sure to prepare this dish and surprise your family and friends! You can present any favorite salad this way, if desired. Serve chilled.

Step 1

Prepare all the ingredients. Boil the carrots, beets, potatoes, and eggs in advance and let them cool. You can buy ready-made herring fillet at the store, or you can fillet the fish yourself. Be sure to remove all visible bones.

Grate the potatoes on a coarse grater and place them as the first layer in the shape of a dragon-to-be. The plate should be flat and large enough. Season the potatoes with salt and spread mayonnaise over them.

Place the herring fillet, cut into cubes, on top. Spread with mayonnaise.

Cut the onion into cubes and pour boiling water over it for a minute to remove the bitterness. Then lightly squeeze and place as the next layer. Season with salt and pepper to taste, and spread with mayonnaise.

Place the grated carrot (on a coarse grater) on top of the onion. Season with salt and spread with mayonnaise.

Next, place the grated eggs. Add salt and spread with mayonnaise.

The final layer is grated beetroot, using a coarse grater. Spread the beet not only on top, but also on all sides. Season with salt, spread with mayonnaise, then use a spoon or a small spatula to shape it into its final form. Don't forget to make a small indentation on the face area for the future eyes.

Using kitchen scissors, cut triangles from the firm part of Chinese cabbage for the spine and oval pieces for the eyes. You can also cut small horns and claws from the cabbage.

Make the pupils from olives and the nostrils from green peas. You can add ears from the firm part of Chinese cabbage, and use the upper part to make wings for a little dragon. Decorate and use your imagination—create your own mythical character!
