
Herring under a fur coat
Description
The recipe won't take much time. In this recipe, I'll show you how to creatively present the classic "Herring under a Fur Coat" salad using gelatin and a springform cake pan. For a richer flavor and extra onion crunch, I recommend marinating the onion in slightly sweetened water with vinegar (you can use lemon juice instead). To make colored gelatin, use beet juice—it will not only give a vibrant color but also enhance the taste. Serve at the table.

1. Pour cold boiled water over the gelatin, mix and leave to swell. Pour cold water over the grated beet, add the swollen gelatin, and stir until the gelatin is completely dissolved.

2. Strain the mixture, season with salt to taste, and pour it into a container so that the gelatin layer is no more than half a centimeter thick. Refrigerate until completely set. Finely dice the onion, add sugar, apple cider vinegar, warm boiled water, and let stand for 15–20 minutes.

3. Cut the salted herring fillet into cubes. Add mayonnaise to the grated carrots, potatoes, beets, and eggs (grated on a coarse grater), and season with salt and pepper to taste. Place the ring from a 21 cm diameter springform pan on a serving dish, with the top edge facing downward.

4. Place the sliced herring into it, then layer the onion (squeezed dry from the marinade), potatoes, carrots, eggs, and beets on top. Cover the dish with plastic wrap and refrigerate for 2 hours. Cut the set jelly into small cubes.

5. Carefully remove the mold from the salad by gently twisting it. Spread a thin layer of mayonnaise over the salad and decorate with gelatin cubes.
