Instructions

Step 1

1. Just 40 minutes—and you can prepare a quick lunch. I suggest the simplest borscht recipe, perfect for a fasting meal. This borscht is made without meat.

Step 2

2. Peel the potatoes, slice them, and put them to boil. Meanwhile, prepare the sauté: finely chop the onion and fry it in vegetable oil.
- 3
Step 3

3. While the onion is frying, grate the carrot on a medium grater and add it to the onion.

Step 4

4. Add the chopped beet and tomatoes (or tomato paste). Sometimes I use homemade fruit drink, which turns out very tasty. In general, borscht made with fresh tomatoes tastes the best. Add minced garlic to the vegetables as well. Then add a little water and steam the vegetables.

Step 5

5. When the potatoes have simmered for a while, add the sautéed mixture and shredded cabbage to them. In spring, when fresh vegetables and young cabbage appear, it would be a shame not to make this simple and delicious borscht. Now you can salt and season it to taste.
- 6
Step 6

6. Cook until the vegetables are done, then turn off the heat. Let the borscht steep for at least an hour.
- 7
Step 7

7. If you let it sit for about 5 hours, its flavor will become even richer. Don't skimp on the vegetables and tomatoes, and then everyone who tries this vegan borscht will ask you for the recipe.
- 8
Step 8

8. Before serving, sprinkle with fresh herbs and, if you're not fasting, add sour cream. Borscht made according to this recipe turns out very tasty and filling, despite being vegetarian.
