Description

The recipe won't take much time. "Tabbouleh" is a cold salad originating from Lebanon. It's made with bulgur (cracked wheat) or couscous, combined with a generous amount of parsley. There are various versions of this salad—Lebanese, Palestinian, Armenian, etc.—differing by the addition of specific ingredients. The word "tabbouleh" in Arabic means "dressed salad." I'll explain and show you how. Serve it at the table.

    To prepare "Tabbouleh" salad, we need to take couscous. Bring water to a boil. Pour boiling water over the couscous. Let it steep for about 5 minutes. The couscous will swell. There's no need to cover the bowl with a lid.

    Cut fresh tomatoes into small pieces. Ideally, you should peel the tomatoes, but I recommend not doing so. We'll be mixing the salad, and the tender tomatoes will turn into mush.

    Chop the herbs. For the salad, we need coriander, parsley, green onion, and you can also add a little dill.

    The couscous will absorb the water. Place the chopped herbs and tomatoes on top of the couscous in the bowl. Squeeze in some garlic. Mix well. Prepare the dressing. Combine some vegetable oil, salt, and pepper. Lightly whisk with a fork. Dress the salad with the prepared dressing and mix again.
