
Roasted Chickpea Salad
Description
Minimum effort — excellent result. In my opinion, this salad makes a great and satisfying dinner. It can be served as a standalone dish or paired with baked fish or meat. You can use canned chickpeas or cook them yourself. I used "Lettuce" salad, but you can substitute it with any other type—iceberg, romaine, or any other to your taste. If you enjoy simple yet interesting salads, save this recipe. Ready to serve immediately.

Prepare the necessary ingredients.

Drain the chickpeas from the can and rinse them, then dry. Transfer to a bowl, add 1 tablespoon of olive oil and 1/4 teaspoon of Provencal herbs. Mix well. Season with salt to taste.

Transfer to a baking dish and place in a preheated oven at 200 degrees for 15-20 minutes.

Bake the chickpeas until golden brown and crispy.

Prepare the salad dressing: mix 1 tablespoon of olive oil, lemon juice, salt and black pepper to taste, and the remaining 1/4 teaspoon of Provence herbs.
