
Salad with oyster mushrooms and beans
Description
The recipe won't take much time. For those who love meat, it's recommended to add sliced smoked sausages or lightly smoked ham to this salad. Smoked chicken breast or regular boiled chicken also works well here. This dish can be served either warm or cold. When serving the salad warm, you can top it with some grated Parmesan cheese, which will make an excellent addition to the ingredients. Serve at the table.

If you are using dried beans instead of canned, you need to soak them in water overnight beforehand. Then boil them in salted water until tender, let them cool down, and use them to prepare the salad. If you are using canned beans, make sure they contain no spices or tomato sauce.

Rinse the oyster mushrooms, cut them into pieces, and boil in salted water. Medium-sized oyster mushrooms take about 20 minutes to cook. Then drain the water from the mushrooms and let them cool.

Peel the onion and slice it into half-rings or, to your preference, chop it even finer. Since both the oyster mushrooms and the beans have a delicate flavor, it's best to neutralize the sharpness of the onion by pouring boiling water over it. Then add the onion to the beans and mushrooms.

The salad should be dressed with vegetable oil and vinegar, previously mixed in a separate container. To taste, you can add black pepper and parsley to the salad. Fresh cucumber also goes well with these ingredients.
