Salad with cheese, tomatoes, and pickled cucumbers
Description
This salad will appeal to all lovers of pickled cucumbers—the cheese and tomatoes will only enhance the dish's uniqueness! Finely chopped green onions, garlic scapes, or dill will add a particularly vibrant flavor. The key is to chop and serve the salad immediately, before the juices are released.
Instructions
- 1
Step 1

Prepare the listed ingredients. You can use hard cheese or brined cheese — according to your taste.
- 2
Step 2

First, slice the pickled cucumbers into half-rings or strips, trimming off the ends. Let the sliced cucumbers sit for 5–10 minutes to release the marinade. Then drain the liquid and gently squeeze the cucumbers. If you skip this step, the salad will become watery.
- 3
Step 3

Wash the tomatoes and remove the green cores. Slice into small pieces and add to the container with the cucumbers.
- 4
Step 4

Cut the hard or brined cheese into cubes and add to the container with the other ingredients.
- 5
Step 5

Season the salad with pepper and dress with vegetable oil. There's no need to add salt or vinegar or lemon juice — they're already in excess in the pickled cucumbers. Gently mix everything and transfer to a plate. You can add chopped fresh herbs. Enjoy your meal!
