
Celery, cabbage, and tomato salad
Description
A simple dish to prepare. I used plum tomatoes, but you can choose any other variety. Do not substitute purple onion with regular yellow onion. Young cabbage is the tastiest option for this salad, but a winter variety will work just fine. Serve chilled.

Wash all the vegetables under running water. Peel the onion and garlic.

Shred the cabbage thinly into strips.

Cut the tomatoes into small cubes.

Place the cabbage strips into a large bowl and vigorously rub them by hand. Add the tomato cubes to the cabbage.

Cut the celery stalks into small pieces.

Slice the onion into thin half-rings.

Prepare the dressing. To do this, in a separate container combine lemon juice, olive oil, soy sauce, add salt, and press the garlic cloves through a garlic press. Mix everything well.

Add finely chopped parsley and prepared dressing to the salad in a bowl.

Mix everything. Place the salad bowl on the refrigerator shelf for 1 hour to marinate.
