
Arugula and squid salad
Description
Perfect for an everyday meal. Today, I chose just one type of seafood—squid. I clean and rinse them thoroughly, then cut into pieces, marinate, and grill (or pan-fry) the squid. Arugula can be substituted with salad leaves. I prepare the salad dressing using lemon juice and olive oil. Garnish as desired and serve.

1. Peel the squids, then cut off the tentacles, remove the innards, and wash thoroughly.

2. Cut the carcasses into pieces of the same size and dry them thoroughly with paper towels.

3. Transfer the pieces to a bowl and drizzle with olive oil (1 teaspoon), let sit for 5 minutes.

4. Preheat the grill, place the squid on it, press down and grill for a few seconds to create a nice grill mark.

5. Wash the arugula, place it on a flat plate, and arrange the squid on top. In another bowl, mix olive oil, lemon juice, and zest, then drizzle the dressing over the salad.
