Mung Bean Sprout Salad

Description

The salad is quick and easy to prepare. Mash is an ancient legume introduced to us through Asian cuisine. Rich in protein, mash is especially beneficial for those following a vegetarian or vegan diet, as well as for people observing fasting. To get the maximum benefit from these beans, it's best to sprout them. The beans taste best on the third day of sprouting, when the sprouts reach about two centimeters in length. At this stage, the mash retains its sweet flavor, reminiscent of fresh green peas, and the sprouts become juicy. Sprouting mash is not only healthy but also fascinating. Although the entire process takes several days, it requires minimal effort. The salad is now ready to serve.

    Prepare all the ingredients from the list. Since sprouted mung beans are required for the salad, you need to start this process in advance. Sprouting mung beans will take three days.

    Rinse the mung beans thoroughly in cold water. Then cover with a large amount of fresh water and let soak overnight.

    The next day, rinse the mung beans and place them in a colander lined with cheesecloth. Put the colander into a container large enough so that it does not touch the bottom of the container. Now, every 2–3 hours throughout the day, pour a glass of clean cold water over the mung beans. Let the water drain off, then discard the water from the container. Keep the sprouting mung beans in a cool, dark place.

    By the end of the first day of sprouting, the mung beans will already produce sprouts, but we need to wait until the sprouts are at least 2 cm long. This will happen by the third day. Now the sprouted mung beans are ready to eat. Before preparing the salad, rinse the mung beans thoroughly. If you don't use all the sprouts at once, the remainder can be stored in the refrigerator for several days.

    Chop the onion, tomatoes, and parsley. Mix them in a salad bowl with the sprouted mung beans.

    Prepare the dressing. Mix olive oil, lemon juice, Dijon mustard, chopped green onion, and garlic. Season with pepper and salt to taste.
